ทุกคนทุกครอบครัวต้องเคยกินผัก การกินผักสิ่งสำคัญที่ต้องทำคือ “การล้างผัก” ผักที่หาซื้อมาจากท้องตลาด ไม่ใช่ว่าจะสะอาดปลอดภัย มักมีสารเคมี สารพิษ ยาฆ่าแมลง และอื่นๆ ตกค้างอยู่บนลำต้นและใบของผัก ซึ่งสารเคมีและสารพิษเหล่านั้นมาจากกระบวนการเพาะปลูกผักก่อนจะมาถึงมือผู้บริโภคอย่างเรา หรือแม้แต่เชื้อโรคในอากาศที่อาจติดมาจากกระบวนการขนส่งผักจากสวนมาขายในตลาด ก่อนจะมาสู่ครัวของเรา

โดยส่วนตัวที่บ้านผู้เขียนมักมีผักที่ใช้ทำอาหาร และผักสดเป็นเครื่องเคียงในการกินอาหารในแต่ละมื้อ มีทั้งผักที่ซื้อมาจากตลาด และผักที่ปลูกเองในบ้าน ซึ่งผักที่ซื้อมามีทั้งที่ปลูกในสวนทั่วไป ผักที่ปลูกแบบออแกนนิค ผํกที่ชาวบ้านปลูกในสวนหลังบ้านแล้วนำมาขาย ซึ่งผักเหล่านี้ไม่มีอะไรมาการันตีว่า สะอาดปลอดภัย หรือแม้แต่ผักที่ผู้เขียนปลูกเองในสวนหลังบ้าน ก่อนจะนำมาบริโภคควรต้องล้างทำความสะอาดเสียก่อนทุกครั้ง
