มารู้จักดอกไม้กินได้

แนวคิดของการใช้ดอกไม้เป็นอาหารไม่ได้เป็นสิ่งใหม่ หากย้อนกลับไปในประวัติศาสตร์ของหลายวัฒนธรรมทั่วโลก ทั้งในเอเชีย ยุโรป และตะวันออกกลาง ต่างมีการใช้ดอกไม้ในการประกอบอาหารมาอย่างยาวนาน ดอกไม้ไม่ได้เป็นเพียงเครื่องประดับหรือสัญลักษณ์แห่งความงามเท่านั้น แต่ยังแฝงไว้ด้วยคุณค่าทางโภชนาการและสรรพคุณทางยา สำหรับประเทศไทย การบริโภคดอกไม้เป็นส่วนหนึ่งของวิถีชีวิต เช่น ดอกโสน ดอกแค และดอกขจร ที่อยู่ในอาหารพื้นบ้านหลายชนิด การใช้ดอกไม้ในครัวเรือนขยายสู่การใช้ในเชิงพาณิชย์ เช่น การตกแต่งจานอาหาร ขนม หรือใช้ในเมนูเครื่องดื่มต่างๆ โดยเฉพาะในยุคโซเชียลมีเดียที่ความสวยงามของอาหารกลายเป็นส่วนหนึ่งของการบริโภค ความนิยมของ “ดอกไม้กินได้” (Edible Flowers) จึงเพิ่มมากขึ้นทั้งในแง่การตกแต่งและบริโภคจริง (ไทยรัฐ, 2566; Bundaree D., ม.ป.ป.; Meekao, 2566)
