อัตลักษณ์ความเป็นไทย นอกจากภาษาไทย การแต่งกาย อีกหนึ่งวัฒนธรรมไทยซึ่งเป็นที่ยอมรับกันทั่วโลก คือ อาหารไทย มรดกภูมิปัญญาส่งต่อจากบรรพบุรุษ เมื่อไม่นานมานี้ก็เป็นที่สนใจเมื่อข้าวเหนียวมะม่วงถูกนำขึ้นเป็นส่วนหนึ่ง ในการแสดงของนักร้องสาวไทยชื่อดังบนเวทีดนตรีระดับโลก เกิดเป็นกระแสให้สังคมกล่าวถึงในแง่ของการเป็น soft power กว้างขวาง

อาหารไทยนั้นนับเป็นเครื่องสะท้อนให้เห็นถึงภูมิปัญญาบรรพบุรุษ ในมิติสุขภาพและโภชนาการที่ส่วนมากอุดมไปด้วยสมุนไพรพืชผักพื้นบ้าน ในแนว plant based โดยเน้นปลาเป็นองค์ประกอบ ดังคำ ในน้ำมีปลา ในนามีข้าว นอกจากรสชาติกลมกล่อม มีคุณค่าทางโภชนาการครบ 5 หมู่ เกือบทุกเมนูเป็นอาหารที่เกิดจากธรรมชาติ เคารพธรรมชาติ กินตามฤดูกาล มีความเป็นอัตลักษณ์เฉพาะถิ่นนั้น ๆ ประเด็นสำคัญ คือ เราจะทำให้คำกล่าวว่า อาหารไทยเป็นได้มากกว่าอาหารนั้น สามารถขยายแนวคิดให้เกิดประโยชน์ต่อการพัฒนาประเทศได้อย่างไร
